I love these flourless muffins for so many reasons! I make them at least once a week for me and my busy family. 

Here is why these nutritious muffins are in my meal prep almost every week:

  • Uses coconut Manna, or coconut butter for that breadlike texture without irritating fibrous grains or alternative flours that are too harsh on the gut
  • They are sweetened with dates so that we can avoid any refined sugar
  • Protein-packed with the eggs 
  • The prep is so simple and it comes together quickly, I used a blender, which makes it perfect for busy mornings
  • This is one of those recipes that my kids always love. I love that I can pull these out on a long car ride or for breakfast on busy mornings. 

How to make this flourless blueberry muffins recipe

Ingredients to make 12 muffins:

Instructions:

  1. Preheat oven to 350ºF
  2. Soften coconut manna on the stove then add to blender with dates. Blend on high for 30 seconds (or until well blended).
  3. Add in the rest of the ingredients and blend for another 30 seconds.
  4. Using a spoon, fold in the blueberries until they are well incorporated into the batter.
  5. Line your muffin tin and add your batter until each muffin cup is filled ¾ full.
  6. Add to your preheated oven and let bake for 30 minutes. 
  7. Once baked, top with grass-fed butter and enjoy!

  1. Once the muffins have been baked and cooled, then you can store them in your fridge for up to 5 days. After that, you can freeze them in an airtight container for up to two months. 

Can you just eat the batter?

  1. Yes! On the GAPs diet, eating raw egg yolks is one of the most essential parts to maintaining your nutrient levels. I will warn you though – I think they taste better once they are cooked so don’t just stop at the batter!

Is this blueberry muffin recipe gluten-free?

  • Because this recipe is made with no flour, this recipe is perfect for anyone with celiac disease or gluten-free or grain-free.

  • 4 dried dates
  • ½ cup shredded coconut
  • 10 eggs
  • 1 tsp salt
  • 1 ½ tsp baking soda
  • 2 tsp vanilla extract
  • 2 cups of fresh or frozen blueberries
