With a few simple ingredients like raw honey and cultured cream (which you can make at home, too!), there are plenty of ways for you to enjoy your dessert and feed your body the best nutrients.

Nutrient-dense ice cream recipe

Whenever you have a craving for ice cream, it can be one of those things that just doesn’t go away until you have some (at least for me!). Since I try to feed my family food that is delicious as well as nutritious, having ice cream is no different. 

Luckily, with a few ingredients and my favorite ice cream maker, it is easier than ever to whip up a sweet treat whenever my ice cream cravings kick in. 

Here are some of my favorite ice cream toppings:

This vanilla ice cream recipe is so delicious on its own. While you don’t even need them, it’s always fun to add toppings to really sweeten the experience (pun intended). Here are a few of our favorites:

  • Unsweetened dried fruit
  • Carob pieces
  • Chocolate chunks
  • Mint leaves
  • My homemade trail mix (here is the recipe for that)
  • On top of an apple pie with homemade pie crust or with homemade cupcakes at your next birthday party

How to make nutrient-dense ice cream

Ingredients:

  • 1-quart AW cream (On the GAPS diet, make sure it is cultured cream. If not on GAPS, then raw cream is ideal, or at least try to make sure it is grass-fed, organic cream that has not been ultra-pasteurized.)
  • 2 tsp Vanilla Extract 
  • Generous pinch of mineral salt
  • ¼ cup of sweetener (on GAPS use raw, local honey. If you are not on the GAPS diet then you can add maple syrup)
  • 6-9 egg yolks from healthy chickens on pasture

Instructions:

  1. Add ingredients to a blender and blend until smooth
  2. Add the blended mixture to your frozen ice cream maker (I love my Cuisinart!) for about 30 minutes.
  3. Dish up and add your preferred toppings. 

Is it okay to eat raw egg yolks?

This is a common concern when you begin eating more nourishing recipes like this one on the GAPs diet. While I recommend that you do your own research, Dr. Natasha says that raw egg yolks are okay to consume if you know that they come from healthy chickens on pasture. I prefer to use raw yolks from our chickens since I know how they are raised and how healthy they are.

The egg yolks help add a lot of nutrition to your food as well as help your ice cream blend really well with a smoother finish compared to other homemade ice creams that I have had. 

Having a lot of yolks in it also makes homemade ice cream scoop easily straight out of the freezer.

Can this recipe be made dairy-free?

Yes! You can substitute the heavy cream for full-fat unsweetened coconut milk for a dairy-free option. Just make sure that it is either made from home or is quality coconut milk with nothing added.
